I am just starting to get into cooking…So I admit I have a little ways to go before I host my first dinner party. Luckily for me though my mom enjoys cooking and encourages me to be her “sous chef ” as often as possible.
One of our favorite pastas to make is a “Yummy” Mediterranean style Orzo. It’s an appetizing recipe you can serve with any main course(like roasted chicken). I think it would also make a great meal for Vegans/Vegetarians too!
Additionally if you have a gluten allergy, you can make it gluten free and it’s just as delicious!
This is an impressive dish that is easy to make and FULL of flavor!

Grape Tomatoes(1/ 10oz container)
Purple onion(1 small )
Feta cheese(1/ 6oz container)
Garlic(2 to 5 cloves/preference thing)
Parsley(fresh or dried/1tbsp.)
Olive Oil(drizzle over veggies & 1/3 cup for vinaigrette)
Salt & Pepper(to taste)
Wash & cut grape tomatoes in half
Dice purple onion
Next combine tomatoes & onions in bowl & drizzle with olive oil & sprinkle in salt & pepper(to taste)
After mixing(make sure evenly coated) spread veggie mixture onto parchment covered baking sheet
Bake in oven at 350 degrees for 20 to 40 minutes(depending on caramelization preference)
Next make Orzo according to package directions
After start vinaigrette dressing(1/3 cup of olive oil & juice of a lemon & add minced garlic & salt/pepper to taste & whisk together & add to drained Orzo
Afterwards combine in tomato & onion mixture
For the “Grand Finale” mix in feta & parsley & ENJOY!
